Steak & Smashed Potatoes

Instructions
For 1 serving of steak, smashed potatoes & greens:
Steak
Remove 1 fillet steak from the fridge about 30 minutes before cooking.
Pat dry with kitchen roll and season with salt.
Heat a pan to medium heat with a little oil.
When the pan is hot, add the steak and cook:
2.5–3 minutes each side
30 seconds on each edge
Remove steak from the pan and let it rest for 5 minutes.
Slice into pieces.
Crispy smashed potatoes
Peel your potatoes (or leave unpeeled if you prefer).
Boil for 10–15 minutes, until soft.
Prepare a tray with a high smoke point oil (e.g. avocado oil).
Smash the potatoes down with a fork.
Paint with oil or butter.
Sprinkle over salt and chopped parsley.
Roast for about 25 minutes, until crispy.
Greens
Boil the greens for 5 minutes.
To serve
Plate the sliced steak with the crispy smashed potatoes and greens.
