Steak & Smashed Potatoes

Instructions

For 1 serving of steak, smashed potatoes & greens:

Steak

  • Remove 1 fillet steak from the fridge about 30 minutes before cooking.

  • Pat dry with kitchen roll and season with salt.

  • Heat a pan to medium heat with a little oil.

  • When the pan is hot, add the steak and cook:

    • 2.5–3 minutes each side

    • 30 seconds on each edge

  • Remove steak from the pan and let it rest for 5 minutes.

  • Slice into pieces.

Crispy smashed potatoes

  • Peel your potatoes (or leave unpeeled if you prefer).

  • Boil for 10–15 minutes, until soft.

  • Prepare a tray with a high smoke point oil (e.g. avocado oil).

  • Smash the potatoes down with a fork.

  • Paint with oil or butter.

  • Sprinkle over salt and chopped parsley.

  • Roast for about 25 minutes, until crispy.

Greens

  • Boil the greens for 5 minutes.

To serve

  • Plate the sliced steak with the crispy smashed potatoes and greens.
